Question about Mali Uromastyx?

Do they hibernate or something because my Mali has been sleeping alot the past couple of days? Also I have been feeding him endive, he loves it and will eat it from my hands most of the time. I cant get him to eat the carrots. Instead of cutting it into pieces, should I shave it to look like the lettuce? Also what else can he eat?
